Recipes for the Healthy in YOU! There are just some recipes that my family and I love and like to enjoy. We don’t always eat healthily. However, when we do it has to taste good and none of us need to know it’s healthy. Therefore, as long as we know it tastes good. That is all we need to know.
My wife will argue with me and say they must be easy to follow and a very small amount to prepare. She loves to cook don’t let her fool you. However, I can get the quick preparation. I am all about quick, fast, yummy food.
Bought and Paid For Healthy Recipes
I am kind of picky so know that all recipes you may see here if it contains something I dislike my wife omits it from the recipe. Or at least she makes it where I have no idea it’s in there. She is an amazing cook and my belly sure shows it. However, it’s all bought and paid for so there should be no problems right? I wish the dr would see things my way.
However, I decided when I got on the scale that it wouldn’t tell me a number and just read ERR on it. It was either growling for me to get off or a real error. Well, the real ERROR is I needed to lose weight. I struggle with the love of food.

Here are some amazing recipes my wife makes and they are good. I am not one for fresh veggies and some I will literally not even touch. However, these recipes will make you some good eating. That is coming from a man who is over 400 lbs and 6 foot 4.
Furthermore, Yes! I am a big guy and I love food. I really love my wife’s cooking. Once you taste these recipes you will know exactly what my dilemma is.
Citrus Chicken
Citrus Chicken is normally made to be grilled. You can do it outside or inside depending if you have an indoor grill or not. If you have no grill you can bake it, it however is so much better grilled. Taste and all.
4-5 Large Chicken Breast
2 Large Oranges (squeeze out the juice)f
1 Lemon
1 Lime
1/2 cup pineapple juice
1/2 cup Lemon juice
To make Citrus Chicken take all the ingredients and place them in an air-tight container or bag. Marinate the chicken in the juices and pieces of orange, lemon, and lime throughout the day. The longer the better.
When you are ready to eat place it on the grill. I like to grill some pineapple rings with this and I will roast some veggies in the oven. To keep the chicken moist while on the grill you want to squirt it with a little orange juice/water, and pineapple juice. Once done pull it all together on a plate and enjoy.
Ground Chicken/or Grilled Chicken Pita Sandwiches
For this recipe, you can use any type of meat. I have used hamburger and grilled chicken cubed as that is the way I like it best. It’s a one-bowl meal. Simply brown the meat you’re using If it’s a hamburger or ground chicken I will use a pound if it’s chicken breast I usually will grill it when it’s done cube it up.
Therefore, once you have the meat completed and drained. Mix all ingredients together and add them to your pita. I get the pocket pita’s so you can stuff them with all this amazing goodness you can. Ingredients you can omit or add or replace with what you like.
Pita Pocket Sandwich
1 cup of ranch dressing
1 can of drained bean sprouts (find these in a can in the oriental section of the store)
A medium head of lettuce thinly chopped or a bag of lettuce
1 tomato thinly cubed
shredded cheese (no limit here, add what you like)
Mix all together with the ranch and meat, fill that pocket pita up and enjoy. These are very good and very healthy. Therefore, enjoy them!
The next recipe I have for you is what I call Cauliflower Delight. This is so amazing and you can use teriyaki, lemon pepper, and maybe just season with a favorite seasoning. It’s all up to you. That is what I like about these recipes. You can make them the way you like. If it calls for an ingredient you don’t like. Don’t eat. Just switch out the food for another veggie that you do like or leave it out altogether. Easy as can be. Pair this with a nice glass of Moscato from WA Wine of the Month Club and you are gonna want to call it a night in.
Cauliflower Delight
1 bag of finely chopped cauliflower, 1 large onion finely chopped, a green bell pepper finely chopped, 1 red and 1 orange bell pepper finely chopped, a cup of finely chopped carrots, and you can use any lean meat of your choice. Turkey, pork, chicken, steak, and if you don’t want the meat leave it out.
Therefore, if using meat brown it and drain it, and set it aside. Then you need to put all veggies in a pan and stir often. Furthermore, you are wanting the onion and cauliflower to be almost translucent. Then add your seasonings like garlic, salt, and pepper, and I love to add some teriyaki. Add the meat and simmer it all together. You can then either add this to a plate and eat it like this. That is our favorite way. Or over a bed of brown rice.
Therefore, I hope you enjoy these recipes and come back often as more will be added weekly. These are good comfort recipes and they are good for you.
